Creamy Mushroom Soup

There I was...  
fumbling around the kitchen searching for something to make for supper...

again.

I seem to be struggling lately with this, but I think I got my mojo back after this meal.

I had leftover cube steak from making these AWESOME sandwiches the other night, so I knew I needed to make something around that.

I happened to have some green peppers and mozzarella cheese, so Philly Cheese-steak grilled cheeses were born!  I just sauteed some green pepper and then added my leftover mixture from the PW site above.  Once it was all heated thru, I buttered my bread.  Lay the bread butter side down (duh :)) in the skillet, top generously with shredded mozzarella.  Add some of your now Philly steak mixture and then more cheese and finally your other piece of bread!

That was the easy part.

So what to go with these sandwiches?  The hubs really doesn't like salad....

But he loves soup!  So I started thinking about what I had on hand and what kind of soup would go well with meaty sandwiches...

Mushroom!

This recipe turned out DELICIOUS!  Husband approved, I might add!  It really only made enough for the two of us, so if you're feeding a family, be sure to double it!

1 onion
1 can mushrooms - Yes, it would be even better with fresh, but this is all I had 
2 cloves garlic
1 T Worcestershire Sauce
1 block of cream cheese
2 C Water
2 Beef Bouillon Cube
1/2 C Parmesan cheese

Slice the onion thinly and saute on low in 2 T butter for about 15 minutes or until soft and translucent.  Grate in the garlic (or mince finely).  Add Worcestershire sauce and mix together.  Add cream cheese and break up into cubes.  Turn heat to low and cover.  Let it sit for a few minutes until the cream cheese is softened.  Add water and bouillon, mix together thoroughly and cover again.  Turn the temp up to Med-Low so that the combination is just about to a simmer.  Once the bouillon has dissolved, stir in the Parmesan cheese and turn the heat back to low.  

Once it's melted in, you're ready to eat!


PS:  Yes those are salad croutons topping the soup!

If you've never tried croutons instead of crackers, YOU ARE MISSING OUT.

SOOO good, especially in Tomato soup!

  1. We eat marlboro man's favorite sandwich a lot! Delicous! Soup and your new grilled scheese do too. We will definitely give it a try!
